Brisket is a cut of beef taken from the front of the animal between the chuck
and the shank. It is comprised of the pectoral muscles that are responsible for supporting much of the animal's weight. Long, slow cooking will break down these tough connective
tissues. A generous component of fat will bring out the full flavor.
Our brisket has been packaged in small manageable sizes of 3.5# to 4.5#, priced
from $28 to $36 ($8/#).
