T-bone steaks are cut from the short loin which is in the middle of the back between the ribs and sirloin. They include a T-shaped bone with meat on each side, the tenderloin and the strip steak. Our T-bones are 1.5” thick, packaged in single or double packs and average around 1.5# per steak.
Since these steaks are the remaining inventory from our 2017 harvest, the packs are discounted 20%. This meat is still as fresh as the day it was packaged. According to the USDA, meat that has been sealed, quick frozen, and stored at 0 degrees will retain the original flavor and texture and will be safe to eat for years.
